Carrot 🥕 cake 🎂 oatmeal
I saw something on Pinterest about a carrot cake oatmeal recipe so I made up my own this morning and I think it was a hit! I started with 4 cups of milk🥛and some molasses and vanilla. Sorry-totally not a measurer 😕. I guess I should start doing that if I’m gonna share recipes. Ummm let’s say about 2 tbsp of molasses and a tsp of vanilla. Then I added 2 tbsp of cinnamon and a tsp each of ginger and nutmeg. The next step, you wanna try and do much differently than I did. We usually only have baby carrots in the house. So yea. Grating baby carrots is not fun. Add 2 cups of grated carrots 🥕. This part is optional. My tiny human needs the extra prunage in his diet so I added about a cup and a half of puréed prunes. Totes optional. Next I added about 1/4 cup of flax seed. Pretty much cause I add flax or chia seed to everything now. Again, totes optional. Another optional step. I had a banana 🍌 that needed to be used so I chopped that up and added it to the pot. Not all of the banana made it to the pot-Jack’s a fan 👐🏼of bananas 🍌. I then added 2 cups of oats and let it simmer for about 15 minutes. It was apparently the longest 15 minutes of Jack’s life. He was hangry. This will definitely be a repeat recipe 📝. It made enough for me to send a huge container to Mimi’s house 🏡 for breakfast all week. And it will keep in the fridge for up to 7 days. Delish!
